Ingredients

  • 1/2 cup Quinoa (dry)

  • 1 1/2 cup Frozen Edamame

  • 2 tbsps Teriyaki Sauce

  • 2 tbsps Extra Virgin Olive Oil

  • 450 grams Chicken Thighs (boneless, skinless)

  • 1/4 cup Water

  • 1 tbsp Cilantro (minced)

    1/2 tsp Chili Flakes

Instructions

  1. Cook the quinoa following the instructions on the package.

  2. In a big pan on medium heat, put in the oil. When the oil gets hot, add the chicken. Cook for 3 to 5 minutes on each side.

  3. Add the edamame and teriyaki sauce. Mix everything well with the sauce. If needed, use water to loosen the brown bits stuck in the pan.

  4. Split the quinoa, chicken, and edamame into bowls. Top with cilantro and chilli flakes. Now, dig in and savour!
